TERROIR: Haute Vallée de l'Aude - LANGUEDOC
As we go up the Aude and get closer to the Pyrenees, our terroir, at altitude, is cooler and benefits from varied climatic conditions. It is the terroir of choice for white wines and our Pinot Noir.
The wind blows over the scrubland hills where our plots are exposed to the snow-capped Pyrenean peaks. The Mediterranean sun provides excellent thermal amplitude giving the wine exceptional aromatic complexity. The vineyard flourishes on terroirs mixing clay, limestone, pebbles and red marl.
Grape varieties and Blend:
- 60% Chardonnay
- 20% Chenin
- 20% Pinot Noir
Winemaking: Traditional method
Our grapes are grown according to the organic farming charter, they are harvested manually in 25 kg baskets, they must be extremly healthy and at good maturity. Our modern press allow us to separate 5 different cuvées while pressuring. In order to get the quintessence of our terroir, we carefully select those cuvées and patiently aged them more than 36 months on racks.

Tasting notes:
With a clear, sparkling color, fine bubbles bring finesse and elegance. This vintage reveals a nose of freshness and elegance. On the palate its freshness and maturity are expressed with characteristics of dried fruits and more particularly hazelnuts.

Best enjoyed between approximately 6° to 8°C / 42° to 46°F.
With a cellaring potential over 10 years.

This cuvée can be enjoyed as an aperitif or with cheese, with grilled fish, white meats in sauce, and cream puffs.
