Terroir: Haute Vallée de l'Aude - Languedoc
Going up the course of the Aude and getting closer to the Pyrenees, this wetter and colder terroir experiences a late spring and a cool autumn. It is the terroir of choice for white grape varieties.
Grape variety: 100% Mauzac
Winemaking: Limoux Méthode Ancestrale.
Our grapes are harvested manually in 25 kg baskets, they must be perfectly healthy with a high sugar content. They are grown according to the organic farming charter.
After pressuring, the fermentation takes place into stainless steel tanks with controlled temperatures. When the fermentation reaches a certain level, we stop it by cold and bottle the wine. Fermentation then continues naturally in bottle, causing sparkling.
Yield: 50hl/ha
Sugar dosage: 55 to 65 g/L.
Addition of liquor: No
Degree of alcohol: 7,5% / vol.
Tasting notes:
With a light and lively yellow color, the fine and numerous bubbles bring finesse and elegance. This cuvée reveals an intense nose of ripe fruit. Suave and harmonious, the mouth is very soft, the main aroma is apple which brings freshness and subtlety.
