AOP Blanquette de Limoux
Terroir: Haute Vallée de l'Aude - Languedoc
Going up the course of the Aude and getting closer to the Pyrenees, this wet and colder terroir experiences a late spring and a cool autumn. It is the terroir of choice for white grape varieties.
Grape varieties and Blend:
- 90% Mauzac
- 5% Chardonnay
- 5% Chenin
Vinification: Traditional method
Our grapes are harvested manually in 25 kg baskets, they must be healthy and are grown according to the organic farming charter. We select the juices at the press in order to obtain base wines of great finesse and high acidity potential. Then a first fermentation takes place into stainless steel tanks before we create the perfect blend.
The second fermentation takes place in the bottle to obtain an outstanding effervescent blanquette.
Yield: 50hl/ha
Addition of liquor: Yes
Sugar dosage: 7 and 8 g/l
Aging time on racks: minimum 18 months
Alcohol content: 12.5°
Tasting notes:
With a clear and lively color, the fine and numerous bubbles bring finesse and elegance. This cuvée reveals an intense nose of acacia and almond blossoms. A beautiful length brings freshness and subtlety on the palate.

Optimal tasting temperatures: 6° to 8°C / 42° to 46°F within the next 3-5 years
To be enjoyed as an aperitif, with fish en papillote, cheese or chocolate fondants.
