From the grace of a plane in flight to the finesse of the bubbles of a medal-winning Crémant de Limoux, there is only one brushstroke from Bernard CADENE! 

 

To celebrate the 5th edition of the airshow, the association "Des Etoiles et des Ailes", Bernard CADENE and our vineyard have created an exclusive sparkling cuvée for you.

This limited edition features the Serres-MOI Extra Dry – Nature vintage 2020, which won a GOLD medal at the 33rd Concours National des Crémants.

 

The artist's unalterable love for colors has enhanced the label of passionate winemakers who have always had their feet on the ground and their heads turned towards the sky.

It was in Toulouse, aeronautics capital,  that Bernard and Patrick met: one a painter-sculptor with a passion for aviation, the other having spent his entire career in the air force taking care of aircrafts.

Years later, Amandine, Patrick's daughter, made her dream come true and became a winemaker alongside Nicolas Therez.

From all these encounters a remarkable vintage was born which gives a taste of the magic of aviation and pays tribute to all its enthusiasts.

TERROIR: Haute Vallée de l'Aude - LANGUEDOC

As we go up the Aude and get closer to the Pyrenees, our terroir, at altitude, is cooler and benefits from varied climatic conditions. It is the terroir of choice for white wines and our Pinot Noir.

The wind blows over the scrubland hills where our plots are exposed to the snow-capped Pyrenean peaks. The Mediterranean sun provides excellent thermal amplitude giving the wine exceptional aromatic complexity. The vineyard flourishes on terroirs mixing clay, limestone, pebbles and red marl.


Grape varieties and Blend:

  • 60% Chardonnay
  • 20% Chenin
  • 20% Pinot Noir

Winemaking: Traditional method

Our grapes are grown according to the organic farming charter, they are harvested manually in 25 kg baskets, they must be extremly healthy and at good maturity. Our modern press allow us to separate 5 different cuvées while pressuring. In order to get the quintessence of our terroir, we carefully select those cuvées and patiently aged them more than 36 months on racks.


Yield: 30hl/ha

Addition of liquor: No

Sugar dosage: 0 g/L

Aging time on racks: 36 months minimum

Alcohol content: 12.5%vol


Tasting notes:

With a clear, sparkling color, fine bubbles bring finesse and elegance. This vintage reveals a nose of freshness and elegance. On the palate its freshness and maturity are expressed with characteristics of dried fruits and more particularly hazelnuts.


Tasting Recommandation:

Best enjoyed between approximately 6° to 8°C / 42° to 46°F.

With a cellaring potential over 10 years.


Food / wine pairing:

This cuvée can be enjoyed as an aperitif or with cheese, with grilled fish, white meats in sauce, and cream puffs.
